Ow! Browned Catfish

1/2 cup Cornmeal
1 T. Old Bay Seasoning
2 T. Jerk Seasoning
Dash of Powdered Ow!
Salt to Taste
2 - 3 Catfish Fillets



Mix cornmeal, Old Bay, jerk, salt and Ow! in a bowl.
Lightly oil catfish fillets. Dip fillets in the mixture until
they're thoroughly coated. Preheat a lightly-oiled
nonstick pan, then fry catfish on each side until
deep brown, and crispy.



Ow! Sweet Alcoholic Shrimp

1/4 cup White Wine
1 T. Dark Rum
Splash of Lemon Vodka (or lemon juice)
1 t. Tabasco Sauce
2 T. Honey
Dash of Powdered Ow!
About a pound of peeled shrimp



Soak skewers in water for about an hour (if wooden
skewers used).  Mix ingredients in bowl.  Marinade
peeled shrimp for about an hour. When finished
set
the mixture aside.  Skewer and grill the shrimp.
Apply the extra marinade with brush while grilling.



Ow! Turkey Gumbo
(Ow's use for leftover turkey)



1 large onion, chopped

1 c. green pepper, chopped

2 cloves garlic, minced

½ c. cooking oil

½ t. ground pepper

Dash of Powdered Ow!

salt to taste

½ lb. Cooked turkey meat (from carcass)

1 c. sliced okra



First - make the Roux:

½ c. veg. Oil

½ c. all purpose flour


Stir flour and oil together in cast iron pan. Cook
over medium-high heat while stirring constantly,
for about 5 minutes. Reduce heat to medium.
Cook for additional 15-20 min., stirring constantly
until the roux turns dark brown.
 


Gumbo:

Use a left-over turkey carcass (most of the meat
should already removed/used).  Boil carcass for
about 15 min. in about 3 cups water (retain the liquid).  
Let cool.  Carefully remove remaining meat from
the carcass, mix back into the hot water you saved. 
Set aside.


Add onion, green pepper and garlic to the roux.

Cook over medium heat until tender. Slowly add

turkey/broth mixture (1/2 cup at a time) and stir.

Add black pepper, salt and Powdered Ow!

Bring to a boil. Reduce heat, cover and cook for

about 30 minutes.


Slice okra. About 10 minutes before serving, add

the okra to the gumbo and cook over low heat.


Serve gumbo over rice.
